Spicy Onion Rings

Ingredients
2 lbs sweet yellow onions
vegetable oil, for frying
1 1/2 cups flour
1 Tbs taco seasoning
2 tsp cornstarch
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp chili powder
1 egg
1 1/2 cups light beer, room temperature
Directions
- Peel onions, and cut into large thick slices. Separate the rings. In a large stockpot, heat oil to 375° F. In a small bowl, combine flour, taco seasoning, cornstarch, salt, pepper and chili powder. Beat the egg in a large bowl, and stir in the beer. Add flour mixture, and whisk to combine.
- Working in batches, dip onions into the bowl. Let excess batter drip off, and place in the oil. Fry a few onions at a time for about 3 minutes or until golden-brown on each side. Transfer to a paper towel-lined baking sheet. Repeat with remaining onions. Keep warm in a 250° F oven. Sprinkle with salt before serving.
- Tip: For both the tempura and beer batters, heat the oil before making the batter, and begin frying immediately. The bubbles from the club soda and beer are what make the batter light.
